Out the back
The weeks are just flying by, and there is hardly any time to spend on the computer. Work is crazy busy, and about to get busier. We fall into bed each night and then do it all over again the next day. I decided to forget the housework this morning and spend some time out in the back garden and with the chooks! The weather wasn't too hot, so that is a bonus!

It was a hit
I made Chicken Tangine with couscous the other night for dinner, and what a hit it was! Both kids cleaned their plates and asked for more! That is almost totally unheard of in this house, as what one usually loves, the other either doesn't or it just "ok!"
It came from this book which I borrowed from the library. We will definitely be having this again!
Chicken tangine with couscous
2 Tbsp olive oil
4 x 180g chicken fillets, trimmed, halved
1 brown onion, thinly sliced
2 garlic cloves, crushed
1 Tbsp Moroccan spice mix
400g can diced tomatoes
400g can chickpeas, drained, rinsed
1 zucchini, halved, cut into 1cm pieces
1 1/2 cups couscous
fresh coriander leaves, to serve
1. Heat half the oil in a large, heavy-based frying pan over high heat. Add chicken. Cook for 2 minutes each side or until light golden. Transfer to a plate.
2. Reduce heat to medium. Add remaining oil, onion and garlic. Cook, stirring occasionally for 2 to 3 minutes until onion has softened. Add spice mix. Cook for 30 seconds or until fragrant.
3. Ruturn chicken to pan. Add tomato, chickpeas and zucchini. Bring to the boil. Reduce heat to low. Cover and simmer stirring occasionally, for 12 to 15 minutes or until chicken is tender and cooked through. Season with salt and pepper.
4. Meanwhile, place couscous in a large, heatproof bowl. Pour over boiling water. Cover and stand for 5 minutes or until liquid is absorbed. Stir with a fork to separate grains. Spoon couscous onto plates. Spoon over tangine. Sprinkle with coriander, Serve.

Friday ...
didn't turn out the way I planned at all after discovering at 6am while feeding and watering the chooks that the gas hot water system was pouring water all over the ground. Lucky Phil was home (still asleep) so I woke him and he turned off the hot water.
By 10am the plumber had arrived to quote an new one! By 5pm we had hot water again, and a fancy new system with infinity hot water! Just what we need. The last system was 16 years old and they last between 8 and 15years, so it did well (we have been here 9 years, so it was already here when we moved in but was always a bit small for our family and we often ran out of hot water. Never again!
The new one looks so small on the wall compared to the old cluncky one. I think I will put some pots of colour underneath to bright it up a bit!

Did you hear that?
I got a little bit excited. I heard rain! Yes, it was infact raining. We haven't had any since October was everyone was excited (it was supposed to be here last night) but by the time I got the camera and went to wake the girls to see if they wanted to go outside (yes we are that excited!) it had stopped. I hope we get some more later.

Corymbia Festival
It was that time of year again today. Our local annual festival, where the girls dance school shows a few items from the year befores concert. Ella jazz item was one of the five chosen this year. It was the first year one of Kates classes hasn't been chosen since 2008, but she was happy to hang out with her friends there. I didn't get as many photos as usual, now the girls are more than happy to wander around with their friends, and pop back for money for food and drink! The weather was the kindest it has been for many years (it is usually 40 odd deg) with a pleasant 28 deg.
